This is a delicious, refreshing, slightly spicy cocktail, which is very easy to make! It is also a good way to use up any mint in your garden which is probably out of control at this time of year. I used my home-made ginger beer and had all of the other ingredients in the apartment.
- 100ml lime juice
- 100ml white rum
- 275 ml ginger beer (plus 15ml to mix)
- 30 mint leaves
- extra mint leaves to garnish
- Mix the 30 mint leaves with the 15ml of ginger beer in the pestle and mortar
- Add all ingredients to a jug or carafe
