Easter Egg Nests with Quail’s Eggs

Easter is coming up, and I wanted to create something festive with my quail’s eggs from the Dietikon market. So, here’s my recipe for Easter Egg Nests… The nest is basically ‘Rösti’ which is a Swiss speciality.

Serves 4

  • 1 tbsp. butter
  • 2 large potatoes
  • 50g hard cheese (I used gruyere)
  • 1 hen’s egg
  • a handful of parsley or chives
  • salt and pepper
  • 12 cherry tomatoes
  • 12 quail’s eggs
  1. Preheat the oven to 150°C fan/170°C conventional/gas mark 4
  2. Grease the inside of 4 ramekins (or other small, oven-proof dishes) with butter
  3. Grate the potatoes and cheese into a big bowl
  4. Add the hen’s egg (lightly beaten), salt and pepper and herb of choice
  5. Mix together and press into ramekins, so they look like little nests
  6. Put them in the oven for 30-40 minutes (until brown)
  7. Remove from the oven, and put 3 tomatoes into each ‘nest’
  8. Then break 3 quail’s eggs into each nest
  9. Put them back in the oven for about 5 minutes (until the white of the quail’s eggs is white)
